Congratulations! That must have been very satisfying. Regarding the cold, I believe that's the premise behind ice wine as well. I grew up in a wine region and went to university with someone who would pick grapes for ice wine to earn extra money. I vaguely remember him saying it was very time sensitive. That the temp had to get to a certain temperature but as soon as it did, you had to hustle and pick. It usually ended up during December exams, of course. 🙂
